We first enjoyed this Apple Tart as a family on a cold night a few weeks ago. Paired with vanilla bean ice cream it was enjoyed immensely by the three of us and we have made it again since and will continue to do so as a new go-to dessert!
2 medium Red Apples thinly sliced. It may be easier to cut the apple down the centre and then slice. rather than apple circles as in the picture in which I used a mandolin to slice the Apple.
2 Lemons juiced roughly 1/2 cup of Lemon juice
1 tsp Cinnamon
3 tbsp White sugar
1 sheet Puff Pastry
1. Preheat oven to 170 degrees Celcius. 2. In a bowl combine Lemon juice, Sugar and Cinnamon. 3. Add Apple slices to mixture and coat all pieces. Let this sit for 20-30 minutes.
4. Using a knife create a border 1cm in from the edge around the sheet of puff pastry. Just be careful not to cut too deep as you don't want it to go all the way through.
5.Using a fork , poke a few holes throughout the centre so that it creates a crusty base when baking.
6. Arrange Apple from one corner down to the other slightly overlapping each piece and keeping the apple off the 1cm border. Do not tip out the liquid left in the bowl.
7. Bake for 15-20 minutes until edges have puffed and are golden. Pour over the top the leftover lemon, sugar and cinnamon liquid. 8. Serve with Icecream and for a special touch icing sugar over the top.
