White chocolate is my absolute favourite!! This fancy rocky road is a favourite in our Cheese and Sweets Hamper, and I have had such nice feedback from customers saying how yummy it is! You could make this as a treat to have at home or even as a nice gift that you could give to a loved one, and it would look great in a glass jar with some ribbon around the top. Enjoy!!
500 gm White Chocolate ( I use cooking chocolate but you could also use normal chocolate) 1 cup Desiccated Coconut 80gm chopped Pistachios 150gm dried sweetened Cranberries
2 cups Marshmallows chopped in half (I used all pink but you can use pink and white) 1/2 cup dried Rose Petals ( If you do not have these you can leave it plain or even garnish with more cranberries and finely chopped Pistachios)
1. Line a square or rectangle slice tin with baking paper (tray roughly 20cm)
2. In a medium-sized bowl combine chopped marshmallows, coconut, cranberries and pistachios (Leave some cranberries and pistachios on the side if using these as a garnish) 3. Break the chocolate into small pieces and place into a microwave-safe container, Microwave in 30-second intervals stirring at every 30 seconds until chocolate is completely melted. 4. Pour melted chocolate over ingredients and mix together until all covered. Pour into the lined tray and spread the mixture out until evenly spread. 5. Set in fridge for 2-3 hours until hard and chop up into smaller pieces. You may find It easier to break up using your hands if a more rustic look is preferred.
