Sunday Pancakes Gf/Df

We spent this morning sitting at the table with our Pjs on drinking hot drinks and helping ourselves to pancakes whilst chatting about life. Pancakes really complete a weekend for me or a camping trip brekkie. This is our go-to recipe that we all love paired with bacon, berries and Maple syrup. The recipe is also GF/DF and requires only a few ingredients.


2 cups Buckwheat flour

2 medium-sized ripe Bananas ( I like them super ripe as they provide more flavour) 1.5 cups Oat Milk (you can also use Almond, Soy) 1/4 teaspoon Baking Powder 1/4 teaspoon vanilla essence or extract 1.5 tbsp coconut oil


1. In a mixing bowl mash both Bananas together.

2. Add Flour, Milk, Baking Powder and Vanilla essence to the mashed Banana. Mix together until all combined and nearly smooth (Banana will remain a little lumpy) 3. Heat a frying pan over medium heat with 1/2 tsp of coconut oil. Once the oil is melted and the pan is hot use a soup ladle to pour in pancake batter. I cook three pancakes at a time, turning each one once bubbles have appeared on the surface and they are golden underneath. Cooking time will be roughly 5 minutes,2.5 minutes on each side. 4. Keep pancakes on a plate covered with a clean teatowel to remain warm and repeat step three with remaining batter. I made 9 medium-large sized pancakes from this mixture.
