Chicken & Prawn Laksa (Kid-Friendly)

Ingredients
2 large chicken thigh fillets, diced
1 ½ cups uncooked prawns, peeled
1 bunch bok choy or pak choy, ends trimmed and leaves washed
1 brown onion, sliced
1 carrot, sliced thinly
2 serves pad thai noodles (about ½ a packet)
½ jar Valcom laksa paste (mild and kid-friendly)
400ml coconut milk
250ml water
Olive oil, for cooking
Optional: lime wedges and crispy shallots to serve
Method
Heat a large wok, pan, or pot (with a lid) over medium heat and drizzle in a little olive oil.
Add the onion and chicken, stir-fry for 5–8 minutes until golden.
Add ½ jar laksa paste, stir to coat, and cook for 30 seconds until fragrant.
Add the carrot and noodles, then pour in coconut milk and water. Stir, cover with a lid, and simmer for 10–12 minutes until noodles and carrot are soft. (Stir halfway through to loosen noodles.)
Remove the lid, add the prawns and bok choy, and cover again. Cook for a few more minutes until prawns are pink and cooked through.
Finish with a squeeze of fresh lime juice and top with crispy shallots if you like a little crunch.
